Gold is malleable, so it makes it easier to create jewelry. It's inert, meaning it won't turn green or red or white like other metals, and when alloyed is very shiny and pretty.

People don't want gold just because it's scarce. Helium is scarce as fuck, but you don't see people hoarding large containers of it.
