My guess is her biggest problem is she's building a unique product every single time so it would be next to impossible to outsource production (e.g a company that makes hundreds of the same bear) which also keeps her production price high.

Unless she can hire another seamstress who she trusts to build good quality stuffed animals shes really going to be limited by the number she alone can produce.
