Advertising. People see an attractive person wearing something they might not be familiar with and continue on to search up what is they are wearing / where it's from. Has the potential to bring in consumers by providing a real life look at what certain characters are like. At the heart of it though i'd say it's purely for advertising reasons.

Pretty sure they did this for Anchorman 2, he's said in interviews there's enough excess footage to create another version of the film with different jokes in every line, and that they are doing it.

I'd assume from merchandise sales, sponsorship deals, and being hired to cosplay for specific video games / tv shows / anime. Conventions would also most likely hire her to promote certain things or even to just show up.
