Because they have a massive amount of infrastructure in place, and tons of fiber they already bought along the railroad lines, to which places like KC have much. Kansas lies between their datacenters in OK and IA as well.

As someone who formerly worked at the G, Iowa's west side has a hella amount of fiber that Google already owns, it has 2 giant data centers and a close proximity to Kansas, so I would think it is on the secondary rollout.

Google uses multiple standards for communications over fiber, if you are seeing 1GB now, they have a 10GB version they are using internally, and a 100GB version in design phase. They never let anyone see what they are really working on, and dont need to when people clamor for what they show and always have something better on the way. People really don't realize the level of networking hardware they are making in house now.
