He is always great with the kids on the junior show. I have heard several times the angry chef is all an act for TV.

I have no doubt that in a high end, pressure filled kitchen he has his moments. That's kind of a kitchen culture really. I just think the tv shows "use it" with a bit extra for ratings

Honestly, I would not really consider Portland in the area of "Downeast Maine" That's usually more often referred to as the area between the Penobscot River and St. Croix River that borders Canada. So Areas like Bar Harbour, Machias, Eastport, Calais....
