This is a perfect example of when to use a semicolon. Your subject is the catapult for this paragraph, constantly referring and contrasting it. But then you bring up the superior trebuchet and the next line use 'they' in reference to the superior quality of the trebuchet. Its confusing.

I just read the article. Very interesting. Do you agree with the view "if it looks like a duck, and quacks like a duck, it's a duck?" I ask because i can only go on what I see and my past interactions with a person. So, if I were to meet someone like you out in the world, as much as it would crush them, I only have gender-defying characteristics to come to a sexual identity. As gender is a typical characteristic, trying to identify a gender on someone is not something I can or should change. However, and I feel this is important, if an individual feels the need to correct me, I will honour and respect their wishes.
This question and following statement I made above is due to some comments in the article where you're revealed to be hurt by the misidentified gender. I can understand that, being constantly misidentified due to physical characteristics you have. But I also hope you can understand that people can only go based on what we see and that we, as adults (I'm presuming others would feel the same way) would not intentionally cause insult, pain, or suffering due to your gender identity. Except for that doctor in the rejection letter: fuck that person.
Related to that, let's assume I'm normal in that I use my senses to make sense of things and humans typically have a sexuality/ sexual defining characteristics. Let's also assume you were talking to the doctor and explained to them you medical condition, your pertinent information including some background for further understanding, and that you are a gender less individual. Then by that vein of thought, you should be immediately approved to have breast reduction surgery.
I'm sorry for your frustration and the lack of understanding you experience constantly. I hope I haven't further contributed to it.

Just a pointer that their website has an independent lab test each batch of their cookies. I speculate that that came out due to the gluten fiasco. I'm not celiac ridden, but this would be exactly what I would look for: independent testing.
edit: that was a fairly recent review. It is more likely that their independent lab failed to test their cookies properly. Who knows. I'd have to look at a 100% gluten free facility instead, just to be safe (if I was celiac).
