No. In most cases this data could be stored encrypted and only decrypted on the user's device.

What guarantees you give that your app does not do the same? Last time I checked it did require those permissions (recording audio & video, access to media).
Does data go through your servers or is it peer-to-peer?
Is it point-to-point encrypted?
If it goes through your servers do you store meta-data eg. who played with who at what time?
