Can I take the bar exam without having done law school and be a lawyer? Does it vary by state?

This is not quite true. In games where you play against the house...true. However, in games where you play against other players...such as poker, there is no house edge. The house gets paid from the pot, or via time, so while the house does make money, there is no house edge.
