What's to stop you from running your own shady internet dealings out of that same exit node (but not via Tor) and if anyone ever came a knockin' (DMCA, etc) you just say "No idea. Tor."

Yeah but then you're bandwidth limited by the network. His local exit node could have 100-1000Mb of bandwidth available.

Unless the other provider allows zone transfers there is no way to do this. You can't just ask for all the DNS records in a zone.

It won't. You can leave your nameservers pointed where they are now if you use external DNS (hosting company/etc), but if you are using your registrar for DNS (you shouldn't be) the records won't move with it.
