My wife works in organ retrieval, soon after starting she opted us all out. I haven't asked why she feels that way but it sounds like its a case that you need to know what goes on before you sign yourself up.

In this particular instance my wife has the expertise and experience which I do not so I trust in her judgement. So to satisfy your curiosity, I shall ask....
She told me organ donors have a higher chance of being pronounced dead prematurely. One of her dead patients moved and raised his arm as they began cutting him open and it was quite a horrific experience. She goes on to say, patients who come into the hospital as "brain-dead" (which is super low brain activity) are shipped to the organ retrieval theater instead of intensive care where they could've been hooked up to life support and have a small chance to recover.
