One of my personal favorites that I think sums up the album quite well is 'Into The Hall of Fame,' which contains numerous themes that, all at once, signals the victory of Red against his rival at the Pokémon League, reprises a theme of homesickness and innocence from the first half of the album, and ends with a triumphant bang as Red enters the Hall of Fame with Professor Oak.

The whole album is one giant narrative, so I'd encourage you to listen to the whole thing, of course! ;P

Johto is an interesting subject. I am currently studying music composition and would prefer to tackle Johto when I am fully equipped to convey the majesty that is the music of Gold and Silver (i.e. when I graduate). The second generation games were my first Pokémon games and naturally have a very special place in my heart.

The album production for Kanto was also a laborious one, so it makes sense for me to approach it once I'm done with school--juggling homework, a part-time job, and a massive album has been very intense. As for an exact timeline, I can't tell right away. But I can tell you that it WILL happen. :)
