How do you keep track of what voices go with different characters? Do you just read the book straight through and do different voices as you go or do you record all of a character's lines at the same time and then edit it?

I've always been curious as to how Audiobook Narrators change their voice slightly for each character. I'd like to be able to read with different voices for characters for my kids, are there any tips you can offer on how I can learn/practice this?
