  • Technically you're supposed to eat everything (except the ginger) with your (freshly washed) hands but you don't necessarily have to. You're allowed to use chopsticks, but if you're bad at them, just stick to your fingers. And it probably isn't why it's wrapped in seaweed, though a lot of foods are like that (see: onigiri); you're supposed to pick up nigiri (raw fish on rice) with your fingers, too.

  • You turn over the nigiri so that the rice doesn't absorb too much soy sauce and ruin the flavor. Some chefs at higher quality places actually brush their preferred amount of soy sauce on the sushi itself, in which case you shouldn't dip it anyway. Less is more with sushi.

  • It depends on the establishment and the chef. Like ketchup on noodles, it's your own preference most of the time. Some people and cultures put ketchup in everything.

  • Sea urchin is gross. My parents eat it while the urchin's still alive... They mix the rice with the guts... blegh.
