What are some other sustainable dishes you serve at your restaurant?

Could lionfish be prepared as sushi/sashimi if frozen correctly? Have you ever tried this?

Are there any residual ideals or attitudes that you find yourself thinking from your religious life that you are still trying to rid yourself of? If for example your order of monks was particularly homophobic, do you find yourself struggling to undo that attitude? (Just as an example, I know not all Catholic orders are homophobic.)
