A bunch of places do this, it costs very little to operate a "new" restaurant under a different name, so you cna gain more customers by competing against yourself and have specialty restaurants as well.. a lot of pizza places (even chili's) will have a "wings" restaurant, mr beast burger started popping up everywhere near me but they're all ghost restaurants. So if i wanted wings, id say "fuck chilis, i want a legit wings place" and end up ordering wings from chili's without knowing it. Also very popular in big cities - there are kitchens that are have no store front for you to visit and if I wanted to open a restaurant in NYC for example, I just hire them and give them a menu and set everything up as delivery only through grubhub/doordash/uber/etc...

define "large enough" - i work with aluminum powders and will probably need to replace tools relatively soon.
