The QR code is basically just a "pay address" and amount.

On the customers phone/device, they will see the "pay address" and amount and can click confirm if it is correct.

Scanning a QR code does not instantly send.

Why would they? I mean they wouldn't be forking out their money if bitcoin value drops.

How do you deal with income statements and such things?

Same way you do it with cash or any other type of payment. Check the registry/take for the day and write it down.
