Are highly processed foods one of the main contributors of inflammation in the American lifestyle? Even through you may not only study diet, what is your personal average day diet?

Thank you for the reply. My wife and I had been dealing with being overweight and unhealthy for years. Last year, we decided to take control of our problem and started cooking everything from scratch. Even if we wanted junk food we had to make it ourselves. After a year we have both lost a lot of weight and we have never felt better. My wife has also gone from having to take 4 medications daily for her asthma to not needing any of her medications. She rarely needs her rescue inhaler now when she used to need it multiple times a day.
We currently eat mostly fruits and vegetables. I guess a mostly vegan diet but rarely will we eat fish, shrimp, and bivalves. We even took a cooking class to learn how to cook with low to no fats, salts, and simple carbohydrates. It helped us change our life.
