Immidiately after liftoff the Saturn V pitched away from the tower slightly to help clear it safely, so I imagine there would have been some noticable movement.

Obviously theres the EVA training, but I think the real reason he mentioned it is because it's a complex skill that gets you out, literally in the deep end. Like a 'broadening your horizons' kind of idea.

These apollo astronauts were made of other stuff man, it'd take a lot to rattle them. John Young's heartrate on the launch of Apollo 16 sat around 60 bpm the whole time.
