Hey Rene, I remember meeting you last year at Noma and we talked about different insects (I’m the guy who almost accidentally dined-and-dashed) and I wanted to tell you that you, along with your team, are truly inspiring.
I remember watching a speech where you recall your food being criticized for its creativity as your team was called the “seal-fuckers” and whatnot. What did you do to get people to try different foods? Also, what drove you to keep going?
