I'm not OP, but I went to culinary school. We had a fair share of older classmates with your story... and to be honest most of them just ended up working at a middle of the road restaurant and burning out very quickly.

It's not as romantic as movies and media would have you believe. It's hard work and you have to be truly passionate about it to want to make it your day job and not just a hobby.

I did it for 6 years including through college and that was more than enough for me for one lifetime. I work in food science now as a product developer, I still get to work with food but in a 9-5 setting with plenty of PTO...

At first working in a restaurant is great but if you're not careful you can very quickly start developing unhealthy habits that come with it: drinking or smoking(hopefully nothing worse)... a horrible sleep schedule, you never see friends and family, your wrists and knees start hurting, etc..

Judging by his posts it would seem like hes a fan of the many types of IPA's

Personally I hate almost all of them, they just seem to try to one up each other with how bitter tasting that can make their beer. It's all too much for me sometimes.
