I can't speak for work visa's, but for a K1 fiance visa, there is significantly less paperwork needing to be "done". Our packet was probably larger than that, though 98%+ was simply "evidence" of our relationship that we printed out (trips, emails, hotel stays, etc).

The actual amount of paperwork needed to be filled out, was probably less than a dozen forms.

No, but that all also happens over time. But yeah, its no fun certainly, but it's not overbearingly complex (at least so far in my experience).
