Since judging takes so long, how do they ensure each dish is served fresh and to the temperature the chef intended?

What exactly does the job entail and why is it a rare job in the field?

Thanks for your response! My bf really wants a career in the medical field after spending a lot of time in hospitals and has been looking into things like medical billing or coding. He has a total knee replacement and titanium tibia and suffers from chronic pain due to this so he isn’t able to stand for too long or sit long either. Is this job typically done in office full time or can it be done remotely?
