Unless you're sending a bit of every loaf out to the lab or have a humidity meter and a pH tester, I doubt it's being stored properly. Cured meats should be stored as any other deli meat. If your boss wants to store them at 70 to 80 degrees, he or she should invest in a cured meat locker and do it right.

That prosciutto sitting out at room temperature on the shelf next to the sandwich oregano is disgusting. I don't give a shit what was done for centuries all along the Mediterranean coast. Life expectancy was 45 for an Italian in 1900.

I'm in the western Philadelphia suburbs here. I commend you for your work.

My question has to do with charters. I heard about several cases in Philadelphia of special needs students being strongly encouraged to leave or simply kicked out of charters for breaking "rules" like not sitting still, running around at inappropriate times or parents not fulfilling their "responsibilities". The implication is that many charters are trying to keep their test scores high by purging themselves of students with disabilities. Is this something you have seen?

Something I wanted to know: Is the bacteria which could cause an illness like cholera always or frequently in drinking water before it is filtered and disinfected, or does it not necessarily exist in the environment?
