The main reason meat is currently so cheap is due to the ridiculous amount of government subsidies, meat is very inefficient to produce even on a large scale.

Yeah I don't doubt that it will take time, but there are enough people who care about reducing meat consumption that at some point the scales will tip, once they've reached the point where the demand, quality and price make it economically viable to produce on a larger scale.
