Yep, you know it - the Italians call it "Mortadella" and the Brits "Spam".

Certainly some is, but in my experience, some of these meats are agglomerated meats (think Jamie Oliver's chicken nuggets demo) .. but perhaps that's just the cheap places.

The BBQ meats that are used seem to be highly processed (which is always a red flag). What meats do you prefer?, presumably on accounts of their unprocessedness
