I recently ordered a cut of tenderloin from my local supermarket so I could make beef carpaccio. I was sold a big piece (1 lb. roast size) with the plastic wrapping and stamp still on the skin. They thought I was crazy. I paid $25 for the hunk of meat to eat raw, and we didn't/couldn't eat the majority of it.

When I got home, I stuck it in the freezer for 2 hours then carved off the outside layers of fat/skin. You want to cut off any outside meat that could be contaminated. Then I sliced the meat into thin pieces and we ate it raw. Served with arugula lettuce, salt/pepper, drizzled in olive oil.

Make sure your area is clean. Make sure your knives are clean. Make sure you cut off any meat that has been touched by others. Serve on cold plates.

We did not get sick and I will make it again. There are recipes for raw beef, you just have to be careful and keep the meat cold.

Firelands Gewurtraminer was the first wine I actually liked. I live in Ohio and I have noticed a lot of wineries popping up all over. My second favorite Ohio winery is Shamrock in Waldo Ohio.

How often would you see another boat while at sea? Did you have to look out for other boats so you wouldn't crash? Or did you have to look out for pirates? I just can't picture crashing into another boat while sailing the wide open ocean.
