So I was wondering if biofortified varieties are climate proofed? I.e. will they continue to deliver the micrnutrients under a range of different climate scenarios?

Some evidence suggests that climate change will negatively affect micronutrient status in staple crops. So i guess your work will understand that better, but also provide varieties that increase micronutrients despite climate change.
