Do filleters often forget to remove the bone at the head of the fillet behind the gills? I find that from Waitrose to Tesco I often have to remove that myself.

Yeah! Google images says I do anyway. Seems like one of the easier bits to remove but I find it pretty often on trout, bass etc.

I think I'm talking about the fifth gill arch or the bone immediately behind it. I don't mind pin bones too much; we're all too lazy with our food as it is.
