I've not heard of this fermentation method before.
What is the lifecycle of your oak fermentation barrels? Do you start with new barrels and use them X number of times and then replace or are they just continually recycled?
Are the barrels charred or uncharred?
If the barrels are continuously recycled, how do you approach maintaining a consistent flavor profile given the barrels will lose their sugars into solution over time?

Yep it's iridium. they're one of the only providers that can offer polar coverage.
