A girl friend of mine is having a group project in their class (Hotel and Room Management) and their topic is fine dining so they will have a mock restaurant running for a week in their university. What advice can you give to her in managing their project to make it like a legit fine dining experience?..

Last year they went chinese resto so it's like fine dining also but chinese cuisine..

Sorry for the lack of info since i'm currently on a seminar.. this time they will serve wine (yey).. They have this european motif centered on french cuisine so they are looking for the best compliments on the food and wine combo.. I'm not really specific on details.. But I'm more into the mindset you guys have in treating the customer well and the difference it makes in turning fine dining into an art.

She's the team leader in their class right now so she's gonna be the sommelier.. I really cant ask for specific advice since I dont know much about this stuff.. Maybe All I can ask at this point is how to deal with uncooperative people since her seniors were very noisy as customers and it ruined the experience for me last time..
