I'm wondering about the level of processing in many of the vegan products out there. It seems like it would be healthier to just eat real food that is vegan (veggies, good fats and fruit). What am I not thinking of? Is it just that people want more variety in taste, texture, etc.? Thanks.

That's really helpful.. ethics more than plant-based health. Makes more sense now. I had probably erroneously assumed they would both be true. wouldn't it be good if kindness to oneself was also important? Maybe it would also be more ethical to treat one's body with care.. adding the goodness instead of only avoiding the causing of pain or exploitation of other living beings (animals).
