From my cinema experience (3 years, 3 different theatres, 3 different countries) by far the best times were during school hours. The only people you'll get in there at that time are old people. Other than that, last showing on a Sunday, everyone has work/school the next day. Worst times are between 5.30-7.30pm weekdays, you get some kids but many people after work, anytime Saturday (kids, tons of kids) and Sunday afternoon (again kids).

I worked for a cinema chain in Australia and they would do a silent auction for the posters. Customers would go up to the usher and say a price they would pay and give their details. When the poster wasn't needed the person was called and could buy the poster. Some of them went for crazy money - Twilight posters especially. Those that didn't sell were free for the staff to take but you had to put your name down first.

I've worked in a few cinemas myself. None cared about cold food (eg. store bought popcorn, crisps etc) hot food was an issue in 2 of the 3 companies I worked for, just because of the smell. Cans and glass bottles were a no no in all three. Kids throw stuff. A full un-opened can or a glass bottle can be seen as a weapon. The food I hated people bringing in the most was sushi. Those motherf*ckers would get rice EVERYWHERE. That stuff is hard to sweep up.
