They have answered a similar question above. They plan to add nearly everything but the prioritize stuff based on how many feature requests they get and how difficult the feature is to implement, so if you want something out in a feature request, that will help to increase its priority.

The color printer is a resin printer, so it would have to be plastic, although it is possible that they would allow the custom painted tier to be metal if you were willing to pay the difference. They were unable to give a firm answer in the Kickstarter but that one is at least possible.

I would buy a second mini for my paladin in one of my long running campaigns of I could get a griffon mount. At least getting the options available in dnds find steed and find greater steed would make it a lot more appealing because almost all paladins and many bards in 5e are going to want one of those, and they are mostly fairly common mounts for anyone.

They haven't explicitly said you can't, but the custom painted reward tier says it is in premium plastic. Their FAQ says if you want to use your printed mini for a larger size they would apply your reward towards the cost and you would just pay the difference, so it appears they are willing to be flexible where possible and I don't see any reason why they couldn't have metal ones custom painted (at least the good bronze ones, the cheap metal option isn't very detailed so that might not be conducive to the very premium paint jobs they seem to be commissioning). Unfortunately, there doesn't seem to be a firm yes or no, but it isn't impossible.

Some of the higher Kickstarter rewards tiers included 3x scale minis, so that would be possible, although I don't know whether they will add it to the final retail options.
