Well, lets say you're talking a literary context with no pictures. How would you describe a person? If I said the person had dwarfism, or was a "little person" or "midget" you would instantly get the picture in your head without having to write a dozen descriptive terms. So categorizing people on appearance isn't a totally impractical exercise. The important thing is using the least offensive version of the categorization, unless offense or depicting a literary character as a rude or ignorant person is your goal.
