By increasing the cost, you reduce the demand for the product. The demand for energy doesn't just go away, but it is either shifted to competing products (solar power, wind power, nuclear power) and/or inspires reduced consumption of energy (increased fuel efficiency).

Ultimately, the faster we shift our economy to renewable (actual ones, not ethanol) energy, the less oil is ultimately extracted.
