Avionics are the electrical and computer guts of the plane. The parts that make sure it doesn't fall out of the sky. He worked on those. Lots of them. A "block" is basically an avionics "package" or configuration, I guess you could say. Block 1 was the first. Block 50 is current.
Military aircraft maintenance is known for getting screwed over (especially in the fighter world), working long days. Back when this guy was in, it wasn't uncommon to work a 12-hour shift, get 8 or less hours off and go work another 12. Repeatedly. Hell, he was probably in back when the limit was 24-hour shifts. Of course, it's a bit different these days. We're (supposed to be) limited to 12-hour days and I think we have to have at least 1 day off a week.
F16's are also not easy on the body. I know a lot of guys that used to be on 16's that seem to have bodies 10 years older than the rest of them.
He's asking if the T-Bird here knows much about what it takes to make sure a jet gets into the air.
