Are there clear pros and cons to maintaining and keeping the same diet for your entire life vs. mixing up your gut biome with different foods?

I understand many concepts for video games never make it to playable form. So, at what point did you say "lets do this" for this concept of post-post apoc. state of the earth? Were everyone excited and onboard with the idea from the start?
