Not many shows still walk you through a dish. It is kind of sad, cooking shows have gone from education to reality TV.

There is nothing you can not learn yourself. There are no secrets you need to go to school for. You can buy a textbook from an introductory cooking class. I have, On Cooking from Laubensky and Hause, third edition. This will give you all of the basics you need.

Cast iron is amazing. I love cast iron, and use them quite a bit. Except when cooking with acidic items, like tomatoes. Acidic foods will react with cast iron and change the flavors of food, if you added aluminum to the mix you would create a battery.

There is a proper pan for different applications. But, cast iron can fit the bill for many items you cook.

This is an excellent perspective. More people should understand, you do not go to bed angry.
