How close is your bacon compared to real meat bacon?(Inclusive of taste, texture and nutrition). Do you consider your product as a replacement for meat bacon or will it be introduced as a new kind of food?

From a nutrition perspective, you must have tested the product extensively to make sure it will not have any adverse health issues in the long term, however we humans have been consuming meat for thousands of years and is part of our genetic make-up, and to substitute it with something which is not 100% meat could lead to health defects, especially for those who live on meat.

What is your opinion on changing your diet for the sake of the environment? Do you think our genes are flexible enough to adapt to a new diet? Do you think the role of genes in your diet is overhyped?

Infact I prefer vegetarian food, I was thinking from a regular meat-eater perspective. The keyword is 'appropriately planned' and you would need to consult a dietician before changing your diet, of course changing your diet will not kill you, but affects your genes in small increments which may lead to health defects generations later. I'm a firm believer that a drastic change will affect you in the long run. You need to be a reducetarian instead.
