From the non union side, you get more freedom, have better control of your hours, but you're looking for work constantly. You usually work somewhere until they don't need you and depending in the gig it can be difficult to know when you'll be tossed out.

There are full-time positions but they are few and far between since they usually need to be year round theaters (some of which are union) or educational.

I was at a McDonalds regularly when they started Breakfast all day. It's apparently just as bad as you're imagining it (manager was saying how he'd quit if they did the full breakfast menu), so don't be surprised when it starts in the UK
