A Center-Left Democrat like Biden will get votes from both Progressives and Moderates. If Democrats shift further Left and choose one of the Socialist candidates, they'll still get votes from Progressives, but the Moderate Dems will likely drop off, netting the Democrats less votes. Why alienate the center in order to please those who will already vote for you?

It is possible for a candidate to support climate regulations without alienating Moderates by going all the way to the Left on other issues.
