Why doesn't Asia (including China) cut up a chicken like westerners? In any authentic chicken dish found there, it looks like the chicken stepped on a land mine.

Thanks for the interesting information (smuggling chicken feet into China 40 years passed the expiration date) but I was referring to the method of "parting" a chicken for a dish. In America for example, the chicken is generally quartered (or similar), but in Asia, it appears they chop up a chicken like a carrot. Every piece of chicken in the meal has bone and cartilage in every bite. Why not cut it where the meat can be easily removed from the bone?
