It's not a word. Which is unfortunate because it would be an awesome word, sounds cool to say. I think the closest word to what you're looking for would be either "vendible" or "salable" (neither of which sound as nice as commoditable).

Also the meat of sheep is quite popular, known as mutton or lamb, so dye would have no affect on the meats value.

Sheep are also regularly dyed even when the wool is being sold (although usually only a small patch and not the whole animal) with a temporary dye to mark it as belonging to a particular farm/herd/age.
