How much of In the Heart of the Sea was shot in the open ocean? What was the most challenging part of shooting at sea?

The colors in your last few movies (especially Rush and In the Heart of the Sea) have been incredibly high on saturation and contrast. Is this done for CGI purposes, or is it a stylistic choice?
