I can back this up. Indeed, most anything that liquids come out of isn't cleaned often or at all, in many restaurants. I've even worked for very expensive Italian restaurants where the same applies. Right down to the water faucets having grime. LOTS of places with protein in the ice cubes... About the only machine I can think of that was actually cleaned regularly anywhere was the soft-serve machines, because it was my personal specialty and they actually won't function if they aren't cleaned regularly, so it's not easily a choice.
