Are your cheeses lactose free? I love cheese but it makes me fart something awful

I've bought a nice vintage Miele to use as a commuter and give my road bike a rest. It's in great shape but the spokes (old galvanized steel) are pretty beat up.

I was thinking about trying to respoke the rims (ambrosia extra elite), but am not sure if it's worth it to do so. Do you think with a vintage bike it's better to keep the original rims as long as possible to maintain the aesthetic or do you think it would be better to just buy a new wheelset?
