love your comment about how people in the West see China as a monolithic mass. China is almost like the entire European continent: provinces are like separate European countries. A European or American would never say "European food" as a catch-all, because they understand the diversity between italian, German etc. How can Cantonese and Sichuan food be thrown into the same category? But maybe the idea of a monolithic "Chinese food" is propagated by the ubiquity of American-Chinese fast food. This kind of stuff is so interesting to think about!

just speaking as a Chinese-American here, but in short, not at all. almost all the dishes served at those kinds of restaurants are indigenous to the US. I highly recommend you watch episode 7 (the fried rice episode) of the netflix show Ugly Delicious if you're at all interested in Chinese-American vs Chinese food culture differences. Dave Chang is passionate and knowledgeable and that episode is so, so spot on, especially as a Chinese kid growing up in the midwest. That being said, I have no shame in loving on some General Tso's

What do you think of Dave Chang's commentary on Chinese/Chinese-American food in the Fried Rice episode of his show, Ugly Delicious? What do you think is the main reason why the exquisite Chinese food culture has never been celebrated properly in the West? Are we on a clear path towards greater recognition of Chinese food as a culture beyond greasy takeout or alien ingredients, or does something bigger have to be done to achieve that acceptance?
