A number of non-profits don't pay anyone including the people who run it. No one at this non-profit gets paid. I looked up their public IRS form and there is zero compensation for anyone.

There are a ton of organizations like this one.

I don't understand why if a bunch of people that enjoy something and genuinely want to contribute have to get paid? That makes no sense to me.

Do people who go to a soup kitchen to volunteer get paid?

No.

Do people who clean up trash on the side of the road they volunteer to keep clean get paid?

No.

Do people who volunteer to help keep public trails maintained and cleaned get paid?

No.

So why should people who want to volunteer in this instance get paid when they just want to help out with the hobby they love?
