What are the behaviors of cats that owners most commonly misunderstand?

I'm looking to purchase (maybe adopt) a kitten very shortly. What is the best way to recognize/pick a cat that is friendly and likes to cuddle? Is there any way to teach them to behave like this or are they usually predisposed one way or the other?
