What would be the ideal alternative to feed the world with the least impact?

Vertical farming is a niche yet, not the rule. Also, it doesn't work for everything. It is mostly for low calorie greens. I don't imagine vertical farming working for avocados or apples.

I wish this studies were more specific. For example, mussels, as far as I know, are different than most aquaculture. They don't demand much space, they don't water except the water they already live in, they don't need to be fed anything, mussels grown in ropes have minimum by-catch, they clean the water, etc. It's important to specify. Also, I think it's important to mention seaweed. I've read about some cases where seaweed is not sustainable.

Think about how much food and water a cow consumes that could go directly to human consultant.

You are not bursting anything. Look at the example I wrote above. Do you know how much food you need to feed mussels, oysters, and other bivalves? Nothing, because they are filter feeders. The same applies to sea squirts and sea pineapples. Seaweed is also seafood. Not all seafood is at the top of the food chain, therefore demanding large amounts of food.
